Senior Sous Chef

We have an exciting opportunity for an experienced Senior Sous Chef to join our team at Briar Dene. The pub is at the heart of Whitley Bay and has recently had a full refurbishment and restoration to its former glory. The Senior Sous Chef must have the ability to help create menus, be financially aware of food costs and GP margins, they must be able to manage a small kitchen brigade efficiently in the Head Chefs absence and deliver team training along with ideas for generating business.
What will make you perfect for the Senior Sous Chef role?
Experience in a similar role and environment, with a genuine commitment and passion for food and quality service
Responsible for maintaining health and safety practices and good hygiene in line with company food safety standards within our kitchen
Be a team player with Strong leadership, communication and organisational skills
Run the kitchen in the absence of the Head Chef
Manage stock control and operating a kitchen in line with food GP
Be creative in bringing new recipes to the table, and will be expected to help write new menus
Have a genuine passion and flair for fresh ingredients along with first rate culinary skills
Responsible for helping the Head Chef to train and motivate staff ensuring a perfect blend in the kitchen

We are now looking for a number of Chef de Parties / Commis Chef for Briar Dene. The pub is at the heart of Whitley Bay and has recently had a full refurbishment and restoration to its former glory. It is essential that the Chef de Partie has creative skills matched to an outgoing personality allowing them to make the most of our locally sourced, fresh ingredients. You will be able to produce food of a high standard, and be confident in all aspects of food preparation and service. You are required to have the willingness to learn from more experienced chefs as well as passing on knowledge to junior members of the team.
Other essential requirements of the Chef de Partie & Commis Chef:
- Previous experience in a busy restaurant environment
- Experience working with fresh food
- Up to date food hygiene and NVQ certificates
- Excellent organisational and communication skills
- Ability to work within a team
- Driven and self-motivated
